If you love coffee cake, you'll love these Apple Cardamom Streusel Muffins! A soft spiced muffin balanced with grounding apple and topped with a brown sugar streusel topping.

Why Granny Smith Apples?

My go-to apple variety for baked goods are Granny Smith apples. They have the perfect balance of tart and sweet and hold their structure under heat. This is important because we don't want a soggy disaster after baking! If you can't find Granny Smith, other great baking varieties include Honeycrisp, Crispin (or Mutsu) and Pink Lady.

What is Cardamom?

Cardamom is a spice recognized by its green pods. It has an herbal warmth like allspice, cinnamon and nutmeg and fragrant notes like mint, pepper and fennel. It instantly brings sweetness, warmth and grounding to any recipe.

Granny Smith apples

Flour

Cardamom

Brown sugar

Granulated sugar

Baking powder

Milk

Eggs

Vanilla

Salt

Overview: How to Make Apple Cardamom Streusel Muffins

  • Whisk together the dry ingredients: flour, brown sugar, baking powder, cardamom and salt
  • Whisk together the wet ingredients: milk, melted butter, eggs and vanilla
  • Combine
  • Fold in the apple
  • Spoon into prepared muffin tin
  • Make the streusel and sprinkle on top
  • Bake and devour!

The Recipe

Ingredients

1 1/2 cups all-purpose flour
1/2 cup brown sugar
2 teaspoons baking powder
1 1/2 teaspoon cardamom
1/4 teaspoon kosher salt
3/4 cup milk, at room temperature
1/3 cup unsalted butter, melted
2 eggs, at room temperature
2 teaspoons vanilla extract
1/3 cup grated Granny Smith apples

Streusel topping:
1/4 cup all-purpose flour
1/4 cup brown sugar
2 tablespoons granulated sugar
1/2 teaspoon cardamom
Pinch kosher salt
1/4 cup unsalted butter, melted

Directions

  1. Preheat oven to 375 F. Grease or line a 12-cup muffin tin.
  2. In a large bowl, whisk together the flour, brown sugar, baking powder, cardamom and salt.
  3. In a medium bowl, whisk together the milk, butter, eggs, and vanilla. Add to the flour
    mixture and mix until combined and smooth.
  4. Gently fold in the grated apple.
  5. Fill 2/3 of each muffin cup with batter.
  6. Prepare the streusel: in a small bowl, combine the flour, brown sugar, granulated sugar,
    cardamom and salt. Add the butter and stir until small clumps form. Sprinkle the mixture
    over each muffin.
  7. Bake for 20-25 minutes or until a toothpick inserted into the centre of a muffin comes out
    clean. Let cool for 5 minutes in the tin and then transfer to a wire rack to cool completely.
    Enjoy!

    Store in an airtight container at room temperature for up to 2 days.
