I love when food comes with a story. Lucky for you, these squares have a fun story to go along with all of their deliciousness!

So, one night I had a dream about making a dessert with my coworker (yes, I literally dream about food). The dessert had a cookie base, a creamy white centre and was covered in caramel and thick chocolate. I woke up and knew I had to bring it to life! I went to work that day and told my coworker she was in my dream and told her all about what we were making. She looks at me with amazement and goes "weird! I used to make bars just like that for my daughters!"

So, I don't know if that means I have special powers? Probably not... but I do have the powers to bring the delicious dessert to life!

In my dream I also remember using the words "bites of heaven" so I of course had to use that as the recipe name. And I mean, look at those layers! Bites of Heaven is kind of perfect in my opinion.

We are talking a thick layer of graham, an irresistible cream cheese centre, ooey gooey salted caramel and lots of decadent chocolate ganache. Does it get any better?

The Recipe

Ingredients

Crust:

Cheesecake layer:

  • 1 brick (250g) cream cheese, room temperature
  • ¼ cup granulated sugar
  • 2 tbsp sour cream, room temperature
  • 1 egg, room temperature
  • ½ tsp vanilla extract
  • Pinch of kosher salt

Caramel:

  • ½ cup granulated sugar
  • 3 tbsp (42g) butter, room temperature
  • ¼ cup cream, room temperature
  • ½ tsp kosher salt

Chocolate ganache:

  • 1 cup (170g) chocolate callets
  • ¼ cup heavy cream
  • 1 tsp vanilla
  • ½ tsp espresso powder (optional but highly recommended)

Optional: flakey sea salt for topping

Directions

  1. Preheat oven to 325 F. Line a loaf pan with parchment paper.

  2. Prepare Crust. Combine all crust ingredients in a medium bowl. Evenly spread mixture into loaf pan and press down.

  3. Prepare Cheesecake Filling. Using a hand mixer, beat cream cheese on high until light and fluffy. Beat in sugar and sour cream and scrape down sides of the bowl if needed. Beat in egg, and then beat in vanilla and salt.

  4. Evenly spread the mixture onto graham crust and bake for 35-40 minutes, or until set in the middle (no longer wiggly).

  5. Prepare Caramel. In a small saucepan, heat sugar over medium heat until melted and brown. Immediately add in butter and stir. The sugar should be hot enough so the butter bubbles when added. Stir in cream and set aside to cool.

  6. Evenly spread the caramel over the cheesecake layer and place in the fridge to set for at least 30 minutes.

  7. Prepare the chocolate ganache. Using a double boiler or microwave, melt the chocolate collets and cream together (microwave in 30-second increments). Once melted, stir in vanilla and espresso powder. Evenly spread over the caramel layer. If using, sprinkle with flakey sea salt. Place in the fridge to set again for at least 30 minutes.

  8. Once set, remove from fridge and cut into squares. Store in a sealed container in the fridge for up to 5 days.
