My Family's Secret Peanut Butter Granola Cookies

These cookies are the perfect balance of sweet & salty, have the chewiest texture, and can be made in 4 easy steps!

I have to give a shout-out to the original creator of these cookies: my brother Max! He was making peanut butter cookies one night (those late night cravings you know?), and decided to throw in basically everything from the pantry: granola, pretzel pieces, m&m's, and Nutella. Long story short, the cookies were DELICIOUS!

The one thing that stood out to me was the granola. It added a whole new flavour and an amazing chewy texture! But the texture is what really got me.

Peanut butter granola cookies have been a hit in my house ever since. I love them so much, that I've decided to share the recipe with all of you!

The Recipe

Ingredients

  • 1 cup crunchy peanut butter
  • 1 egg or vegan substitute
  • 1/4 cup brown sugar
  • 3 tbsp maple syrup
  • 1/4 tsp salt
  • 1/2 cup granola of choice
Optional add-in ideas: pretzel pieces, chocolate chips, chocolate candies, coconut flakes.

Directions

  1. Preheat oven to 325 F.
  2. Cream together peanut butter, egg, sugar, maple syrup and salt. Stir in granola (and any add-ins you may be using).
  3. Spoon onto a parchment lined cookie sheet, 2 inches apart.
  4. Bake 20 minutes, or until lightly browned. Do not over cook as they will harden as they cool. Cool 5 minutes on baking sheet and then transfer to a wire rack to cool completely. Eat immediately, or store in a sealed container for up to 3 days.
 
NOTES:
 
* These are freezer friendly. If freezing, place cookies in an airtight container or freezer bag. Freeze up to 1 month and thaw at room temperature before serving.
