These gluten-free White Chocolate and Cardamom Streusel Muffins are perfect for dessert or breakfast. They are fluffy, moist and sprinkled with a divine cardamom streusel for that bakery style deliciousness. Simple ingredients and only 10 minutes prep time!

  • Whisk together the dry ingredients: flour, sugar, salt and leaveners.
  • Whisk together the wet ingredients: milk, oil, eggs and vanilla extract.
  • Combine
  • Fold in the white chocolate
  • Spoon into muffin tray
  • Add streusel topping
  • Bake and devour!

The Recipe

Ingredients

Muffins

  • 1 1/2 cups all-purpose gluten-free flour
  • 1/2 cup brown sugar
  • 2 tsp baking powder
  • 1 1/2 tsp cardamom
  • 1/4 tsp kosher salt
  • 3/4 cup milk, at room temperature
  • 1/3 cup coconut oil, melted
  • 2 eggs, at room temperature
  • 2 tsp vanilla extract.
  • 1/3 cup white chocolate, melted
  • 1/3 cup white chocolate chips

Streusel Topping

  • 2 tbsp granulated sugar
  • 1/4 cup brown sugar
  • 1/2 tsp cardamom
  • pinch kosher salt
  • 1/4 cup coconut oil, melted
  • 1/4 cup all-purpose gluten-free flour

Directions

  1. Preheat convection oven to 375 F. Line a muffin tray with 10 paper liners.
  2. Prepare Muffins. In a large bowl, whisk together flour, brown sugar, baking powder, cardamom and salt.
  3. In a medium bowl, whisk together milk, coconut oil. eggs, and vanilla. Add to flour mixture and mix until combined and smooth.
  4. Fold in melted white chocolate and then fold in white chocolate chips.
  5. Fill 2/3 of each prepared muffin cup with batter.
  6. Prepare Streusel. In a small bowl, stir together all streusel ingredients leaving some small clumps for texture. Sprinkle the mixture over each muffin.
  7. Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean, 15 to 17 minutes (will need 20-25 minutes for a regular, non-convection oven). Enjoy!

 

NOTES: For gluten-free flour, I recommend a blend that is similar to Cup4Cup for this recipe.
